Thanks to unique pasture, meat is here a matter of tradition and features an exceptional variety of products. The beef of the local cattle, "Razza bovina piemontese", has a very low cholesterol content and it is distinguished by a breeding standard which guarantees its quality. The meat from white Piedmontese calves is present in some of the region's key specialities, from the famed "bollito misto" to raw steak, minced by hand or served "all'albese". And then the pork salamis: raw or cooked salamis which are second to none, along with other typical cured meat such as “Filetto baciato”, “Mustardela”, various hams etc.
